Scones

INGREDIENTS:
2 cups unbleached flour
1/2 teaspoon each baking soda and salt
2 teaspoons baking powder
1 Tablespoon sugar (optional)
1/4 cup butter or Hain® Safflower margarine, cut into chunks
1/2 cup currants or 1 teaspoon lemon zest (optional)
3/4 cup Plus Plain Soymilk

Preheat oven to 425°F. In a large bowl, combine dry ingredients. Stir until well mixed. Add butter and rub with your fingers until coarse crumbs form. Add currants or lemon zest and stir. Add soymilk and stir until dry ingredients are evenly moistened.

Turn dough out onto a lightly floured board and knead 12 turns. Pat dough into a 6-7 inch circle and place on a greased baking sheet. Score loaf with a knife into 8 equal wedges. Bake until well-browned, about 25 minutes. Yield: 8 scones.
