Macaroni and Cheese

INGREDIENTS:
8 oz. dry macaroni (2 cups)
4 Tablespoons butter
4 Tablespoons flour
2 cups any WestSoy Plain Soymilk
2 cups (8 oz.) shredded cheddar cheese or alternative
1 bottle (2 oz.) sliced pimentos
1 teaspoon Westbrae Organic Yellow Mustard
Salt and pepper
Paprika (optional)

Preheat oven to 350°F. Cook macaroni in boiling water until tender and drain well. Meanwhile, melt butter in a medium-sized saucepan, add flour, stirring to combine. Slowly add soymilk and cook, stirring until mixture thickens and beings to boil. Remove from heat and stir in shredded cheese or alternative, pimentos, mustard, and salt and pepper to taste. Add drained macaroni, mixing well. Turn into lightly greased 2-quart baking dish. Sprinkle with paprika, and bake 30 to 40 minutes until bubbly around edges and golden brown on top. Makes 8 servings.
