Garlicky Potatoes3 medium potatoes, peeled and quartered
Place the potatoes in a medium saucepan with water and bring to a boil. Reduce heat to medium low. Cook covered, allowing steam to escape, for about 20 minutes. Potatoes should be fork tender. Drain thoroughly using lid to hold back potatoes. With an electric hand mixer, "mash" potatoes to a smooth consistency. In a small fry pan, heat oil, add garlic and onions. SauteĆ, stirring frequently, until softened. Add to potatoes. Slowly add hot rice beverage, blending with mixer. Add salt and pepper. Serve hot. |
