Cream of Broccoli SoupINGREDIENTS:
Bring broth to a boil in large pan. Add broccoli pieces and chopped onion. Cover and cook until tender (about 10 minutes). Drain, reserving cooking liquid and 1 cup of broccoli pieces. Puree remaining broccoli and onions in food processor or blender, adding some cooking liquid if necessary. In the same pan, melt margarine over medium heat. Sprinkle in flour and stir well. Slowly stir in the reserved cooing liquid and cook, stirring until mixture thickens and begins to bubble. Stir in pureed broccoli and WestSoy. Add salt and pepper to taste, and cool slightly. |
